Sourdough rises with a starter: a living mix of flour, water and natural yeast. Making one from scratch means feeding flour and water every day for about 1โ2 weeks until it's strong enough to bake with. The Kit + Heirloom Starter includes a dried, ready-made starter, so you only need to wake it up with a few feedings and can bake much sooner.
Flour, water, salt and a 4โ6 qt Dutch oven. A kitchen scale helps but isn't needed to start.
